ふきのとう（蕗の薹）は、春の訪れを告げるフキの花の蕾で、ほろ苦い風味と爽やかな香りが特徴の山菜です。
2〜3月が旬で、天ぷらやふき味噌、和え物などにします。

Butterbur stalks are the flower buds of the butterbur plant that herald the arrival of spring. They are wild vegetables characterized by a slightly bitter flavor and refreshing fragrance. They are in season from February to March and are used in tempura, butterbur miso, and salads.
