コルドンブルー

今週のいちむランチは、薄くたたいた鶏むね肉にハムとチーズを挟んで揚げ焼きしたコルドンブルーです。フランスでは「料理上手」を意味するコルドンブルー。鶏むね肉をしっとりと、そして中のチーズが出てこない様にゆっくりと火を入れ、お肉休ませて余熱で仕上げます。

Cordon bleu

This week's Ichimu lunch is cordon bleu, which is fried chicken breast with ham and cheese sandwiched between thinly beaten chicken breasts. Cordon bleu means "good cook" in France. Moisten the chicken breast and slowly heat it so that the cheese inside does not come out, let the meat rest and finish it with residual heat.
